How to Take the Temperature of a Fire
1. Spread coals evenly on bottom of grill and set cooking grate in place.
2. Place hand about 5 inches above grill and count how long you can comfortably leave it in place.
* 2 second - Hot
* 3 to 4 seconds - Medium-hot
*5 to 6 seconds - Medium
*7 seconds - Low
If the fire is not hot enough, add more coals and wait 10 minutes before testing as above. If fire is too hot, spread coals out towards sides of grill and allow 5 minutes before testing as above.
